Baked Beans & Avocado Toast
- 1 x 425g SPC Baked Beans with rich tomato salt reduced
- 4 thick slices sourdough bread, toasted
- 1 avocado, mashed
- 1 long red chilli, thinly sliced or 1 teaspoon chilli flakes (optional)
- ½ lemon, juiced
- Black pepper (if required)
- Place SPC Baked Beans in a microwave safe bowl and heat on high for 2 minutes, stir and heat for a further 30 seconds or heat in a small saucepan over low heat for 5 minutes, stirring constantly until heated through.
- In a small bowl, roughly mash avocado, add lemon juice.
- Evenly spread avocado on each slice of toast. Top with 2 tablespoons baked beans and add chilli and black pepper.
