Fruit Medley Chia Pudding


  • 1/3 cup white chia seeds
  • 400ml coconut milk
  • 2 tbsp maple syrup
  • 700g jar fruit salad, drained
  • Raspberries and toasted shredded coconut, to serve 


  1. Combine chia seeds, milk and syrup in a bowl. Cover with plastic wrap and refrigerate overnight.  
  2. Spoon a layer of fruit in the bottom of 4 serving glasses, top with a layer of chia pudding, more fruit finishing with chia pudding into the bottom of 4 serving glasses. Top with raspberries and coconut.
