Veggie Spaghetti

Ingredients

  • 1 x 440g SPC Spaghetti Tomato & Cheese
  • 3 Zucchini, spiralised
  • 2 Carrots, spiralised
  • 2 tablespoons Pine nuts, toasted
  • 1/4 cup Basil leaves
  • Salt & Pepper 

Method

  1. Heat SPC Spaghetti Tomato & Cheese in a microwave safe bowl, cover, heat on high for 2 minutes, stir and heat for a further 30 seconds or heat in a small saucepan over low heat and 5minutes, stirring constantly until heated through. 
  2. In a medium saucepan, bring water to boil. Blanch zucchini and carrots for 2 minutes then drain in a colander. 
  3. In a large serving bowl, add zucchini, carrots and warmed SPC Spaghetti Tomato & Cheese, top with nuts and basil. Serve as a light lunch or side.
