Fried Chicken with Spiced Apricot

Ingredients

  • Marinade
  • 2 cup Buttermilk
  • Chopped coriander
  • Crushed garlic
  • 1 onion diced
  • ½ tablespn Chilli flake
  • Salt
  • SPC Pureed Apricots
  • 2 kg Cut chicken pieces

  • Flour mix
  • 3 cups flour
  • Salt pepper

  • Sauce
  • SPC Tinned Apricots with liquid
  • 1-cup sugar
  • 2 cup white wine vinegar
  • Minced ginger
  • Sweet chilli sauce

Method

  1. In a large bowl combine all ingredients together for marinade (including chicken) and sit overnight
  2. Dust each piece chicken in flour mix place a on a rack sit in fridge 30 min-4hrs
  3. Meanwhile combine all sauce ingredients together simmer 20 mins and puree
  4. Heat oven 200c add oil to a pan heat pan in oven add chicken skin side down cook 15 mins turn over ½ way once cooked drain serve on sauce
