Fried Chicken with Spiced Apricot



2 cup Buttermilk

Chopped coriander

Crushed garlic

1 onion diced

½ tablespn Chilli flake


SPC Pureed Apricots

2 kg Cut chicken pieces


Flour mix

3 cups flour

Salt pepper



SPC Tinned Apricots with liquid

1-cup sugar

2 cup white wine vinegar

Minced ginger

Sweet chilli sauce


In a large bowl combine all ingredients together for marinade (including chicken) and sit overnight

Dust each piece chicken in flour mix place a on a rack sit in fridge 30 min-4hrs

Meanwhile combine all sauce ingredients together simmer 20 mins and puree

Heat oven 200c add oil to a pan heat pan in oven add chicken skin side down cook 15 mins turn over ½ way once cooked drain serve on sauce
