Chicken and Bean Tacos

Our chicken and bean tacos are colourful, vibrant and the perfect dinner for you and your guests!

Chicken & Capsicum:

Ingredients

  • 8 chicken breast, sliced thinly
  • 2 tbsp vegetable oil
  • 2 tbsp taco seasoning
  • 1.5kg of SPC Baked Beans Rich Tomato
  • 6 red capsicum, sliced thinly
  • 3 green capsicum, sliced thinly
  • 30 soft shell tacos
  • 2 cup corn kernels
  • 500g shredded tasty cheese

Method:

  • In a mixing bowl, toss sliced chicken breast with oil and taco seasoning.
  • In a medium fry pan, cook chicken for 15 minutes over medium-high heat. Set aside.
  • In the same pan, cook capsicum for 10 minutes or until softened. Set aside.
  • To create the taco, layer chicken, SPC baked beans, capsicum, corn and shredded cheese. Enjoy!

Chicken & Avocado:

Ingredients

  • 8 chicken breast, sliced thinly
  • 2 tbsp vegetable oil
  • 2 tbsp taco seasoning
  • 30 hard taco shells
  • 2 red onion, sliced thinly
  • 4 avocados sliced
  • 1.5kg of SPC Baked Beans Rich Tomato
  • 500g feta, crumbled

Method:

  • Pre-heat your oven to 100c and place taco shells in it for 20 mins.
  • In a mixing bowl, toss sliced chicken breast with oil and taco seasoning.
  • In a medium fry pan, cook chicken for 15 minutes over medium-high heat. Set aside.
  • To create the taco, layer chicken, red onion, avocado, SPC baked beans and feta. Enjoy!
