Apple Coconut Carrot Cake Loaf


  • SPC Sliced apples
  • 275g Dates
  • 20g Bi-carb
  • 2 x Grated carrots
  • 100g shredded coconut
  • 200ml Boiling water
  • 185g Butter
  • 260g Brown sugar
  • 2 Eggs
  • Vanilla
  • 350g Flour
  • Pinch salt


  1. Cream butter sugar and add eggs and vanilla mix well fold in flour keep
  2. In a separate bowl pour boiling water over dates and bi carb
  3. Add to butter mix fold in apples (will be runny)
  4. Bake in tins 190 for 50 mins or muffin trays 185c for 20-30 min
