Apple Coconut Carrot Cake Loaf
Ingredients
- SPC Sliced apples
- 275g Dates
- 20g Bi-carb
- 2 x Grated carrots
- 100g shredded coconut
- 200ml Boiling water
- 185g Butter
- 260g Brown sugar
- 2 Eggs
- Vanilla
- 350g Flour
- Pinch salt
Method
- Cream butter sugar and add eggs and vanilla mix well fold in flour keep
- In a separate bowl pour boiling water over dates and bi carb
- Add to butter mix fold in apples (will be runny)
- Bake in tins 190 for 50 mins or muffin trays 185c for 20-30 min
