Rosie’s Quick Shakshuka


  • 2 x 400g cans Ardmona diced tomatoes
  • 1 tsp chilli flakes
  • 1 tsp smoked paprika 
  • Salt & pepper
  • 1 bag spinach
  • 4 eggs


  1. Add tomatoes, chilli and paprika to a saucepan over medium heat, simmer for 2-3 minutes stirring occasionally. 
  2. Season with salt and pepper, and gently stir through spinach until it begins to wilt. 
  3. Create 4 wells in the sauce, crack an egg into each well. Cover with a lid and cook until the whites have set. Season to taste with salt and pepper before serving.
