Lemon Myrtle Two Fruit Popsicles


  • 1 cup lemonade
  • 50ml lemon myrtle syrup
  • 50ml lime juice cordial
  • 700g jar two fruits, with juice, drain reserving 60ml juice
  • 16 mint leaves


  1. Combine lemonade, lemon myrtle syrup, cordial and 60ml reserved juice. Spoon two fruits into 8 x 80ml capacity popsicle moulds. Push 2 mint leaves into each mould.
  2. Fill with lemonade mixture. Freeze for 2 hours or until firm enough to push popsicle sticks in the center. Freeze overnight. 
  3. Dip moulds in hot water for a few seconds to release popsicles.
