Meatball Pizza
Meatballs in Tomato Sauce:
- 500g beef mince (or use a mixture of beef and pork)
- 1/2 cup flat-leaf parsley, finely chopped
- 1 cup fresh breadcrumbs
- 1 egg, lightly beaten
- 2 tbs olive oil
- 1 small brown onion, finely diced
- 1 tbs tomato paste
- 2 x 410g cans Ardmona Rich & Thick Basil & Garlic Tomatoes
- 1 tsp sugar
Pizza:
- 2 large fresh pizza bases
- 1 quantity (3 1/2 cups) Meatballs in Tomato Sauce
- 2 cups shredded mozzarella cheese
- Small basil leaves, to serve
Meatballs In Tomato Sauce:
- Combine mince, parsley, breadcrumbs and egg in a large bowl. Season with salt and pepper. Mix until ingredients are well combined. Using a tablespoon of mixture per meatball, form into small meatballs. Place in a single layer on a tray lined with baking paper, cover and chill for 20 minutes
- Heat 1 tbs oil in a large heavy based frying pan. Cook meatballs, in batches, until evenly browned. Remove and set aside
- Heat remaining 1 tbs oil in the pan over medium heat. Add onion and cook, stirring often, for 4-5 minutes until softened. Stir in tomato paste and cook, stirring, for 1 minute. Add tomatoes, sugar and 1/2 cup water and stir to combine. Cover and bring to the boil. Add meatballs and their cooking juices. Reduce heat, cover and simmer for 20-25 minutes or until at desired consistency

- Preheat oven to 220°C/200°C fan-forced
- Place pizza bases onto pizza or baking trays
- Spoon the tomato sauce over pizzas then scatter with the meatballs
- Sprinkle with cheese
- Bake for 12-15 minutes until cheese melts and crust is crisp
- Sprinkle with basil. Slice and serve
