Veggie Wholemeal Wraps with satay dipping sauce
Delicious and nutritious, our veggie wholemeal wraps are the perfect lunch option.
- 1/2 smooth peanut butter
- 1/3 cup light coconut milk
- 3 tsp sweet chilli sauce
- 1 lime, juiced
- 6 whole meal wraps
- 1 cup Goulburn Valley Mangoes, sliced thinly
- 1 cucumber, julienned
- 1 red capsicum, cut into thin batons
- 1/4 red cabbage, shredded
- 2 carrots, julienned
- 1 bunch mint, shredded
- In a small bowl, combine peanut butter, coconut milk, sweet chilli sauce and lime juice. Season to taste.
- Layer Goulburn Valley mangoes, fresh vegetables and mint in whole meal wraps.
- Serve wraps with satay dipping sauce.
