Mango Prawn Cocktail
A modern twist on a classic!
Ingredients
- 1/4 cup tomato sauce
- 1/4 cup thin cream
- 1 tsp Worcestershire sauce
- 1/2 tsp Tabasco
- 1 tbsp lemon juice
- 1 cup iceberg lettuce, shredded
- 1 cup red cabbage, shredded
- 1 cup Goulburn Valley Mango, sliced thinly
- 12 cooked prawns
- 2 tbsp lime zest
- 2 tbsp mint leaves
Method
- To make the cocktail sauce, combine tomato sauce, cream, lemon juice, Worcestershire sauce and Tabasco in a small bowl. Taste and season with salt and pepper.
- To assemble the prawn cocktails, layer the ingredients amongst 6 martini glasses. Serve immediately. Enjoy!
