Coconut Chia Pudding with Peach Puree
- 1 cup coconut milk
- 1 cup almond milk
- 1/3 cup chia seeds
- 1/3 cup unsweetened coconut flakes
- 2 Tablespoons maple syrup
- For the peach puree:
- 1 ½ cups Goulburn Valley Peaches, cut into cubes
- In a mixing bowl, whisk together the coconut and almond milk, chia seeds, coconut flakes and maple syrup until well combined. Place in the refrigerator for a few hours or until thick and of a pudding-like texture.
- Meanwhile, blend the peaches and maple syrup in a blender until smooth and creamy. Place in a container and refrigerate until ready to serve.
- To serve, layer the peach puree and chia pudding mixture in a serving dish. Top with extra shredded coconut and some poppy seeds.
