Tomato Jam & Peach Tart
A summery entertainer that tastes like you tried very hard but truly did not. The base is a jammy Ardmona tomato layer baked onto flaky butter puff, then loaded with ripe peaches, shaved prosciutto, rocket and burrata snipped open at the table. Fresh, salty, sweet and absolutely irresistible.

- 400 g can Ardmona Rich & Thick Diced Tomatoes with Paste, Basil & Garlic
- 1 tbsp brown sugar
- 1 tbsp balsamic vinegar
- 1 sheet butter puff pastry, rectangle
- 1 egg, whisked
- 1 tbsp milk
- 2 tbsp fi nely grated parmesan
- 2 to 4 ripe white peaches, sliced
- 4 slices prosciutto
- 1 handful rocket leaves
- 2 balls burrata, room temperature
- 1 lemon, zest only salt, for seasoning
1. Place the Ardmona tomatoes in a saucepan with the brown sugar and balsamic vinegar and cook over medium low heat until thick and jam like, then set aside to cool.
2. Heat the oven to 200 degrees fan forced.
3. Place the puff pastry sheet on a lined baking tray and score a border around the edge that is one and a half centimetres in from all sides.
4. Brush the border with the egg and milk mixture.
5. Spread the cooled tomato jam evenly inside the border.
6. Dust the surface lightly with the parmesan.
7. Bake for ten minutes until the pastry begins to puff, then reduce the oven to 180 degrees and bake for a further fi fteen minutes until golden.
8. Allow the tart to cool slightly, then top with the sliced peaches, prosciutto and rocket leaves.
9. Snip the burrata balls open over the tart so the creamy centres spill across the surface.
10. Finish with lemon zest and season lightly with salt before slicing.
HINTS
1. Bake the tomato base ahead and keep at room temperature, then assemble the toppings just before serving.
2. Swap peaches for nectarines, fi gs or heirloom tomatoes depending on the season.
3. Add a sprinkle of chilli fl akes before serving for gentle heat.
