Apricot Salad Dressing

Ingredients

  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon apple cider vinegar
  • 2 SPC apricot halves
  • 1 teaspoon Dijon mustard
  • I teaspoon honey
  • 1/4 teaspoon sea salt

Method

  1. Place all ingredients in a bowl and blend on highest setting until smooth
  2. Serve over fresh salad
