SPC Fruit & Banana Loaf

Ingredients

140g Soft Butter

140g Caster Sugar

2 Eggs

160g self-raising flour

1 tsp. Baking Powder

1 very ripe banana mashed

80g strained SPC Fruit such as Diced Apricot Bakers Choice

50g icing sugar

 

Method

Heat oven to 180 degrees celsius

Grease and Line loaf tin

Cream butter and sugar

Add eggs, mix well and fold in flour, fruit and baking powder

Pour into tin and bake for 30-40 mins until set

Cool in tin for 10 mins, then remove

Mix 50g icing sugar with 2-3 tsp. water to make a runny icing & drizzle icing across the top of loaf.
