Preserved Lemon and Pear Chicken



Olive oil

Chopped Spanish onion

Crushed garlic

Minced ginger



1 chicken (1.7kg approx.)

Chicken stock

SPC drained pears

125g medium olives

Preserved lemon sliced zest

Chopped coriander

Chopped parsley

Salt pepper

Cooking Method

Heat oil in a pan. Add onion, garlic, ginger, cinnamon, and saffron, remove from pan.

Place chicken on a tray pour mix over chicken. Add stock, pears and bring to boil.

Add remaining ingredients bake 25-35min 180c.
