Moroccan Style Saffron Apricot Chicken


  • 400g SPC Tinned Tomatoes
  • Diced onion
  • Crushed garlic
  • 1 tin Drained SPC Apricots
  • 1 chicken cut
  • Cinnamon
  • Saffron
  • 3 lemons juiced and for zest
  • Olive oil
  • Flaked almonds and raisin for garnish


  1. In a pan add chicken add ½ tomato all onion garlic apricots.
  2. In a bowl combine remaining tomatoes spices lemon juice pour over chicken
  3. Heat pan to simmer place foil on top and cook 30 mins
  4. Drain chicken and puree the sauce mix place back over chicken garnish with almonds raisins and lemon zest
