Caramel Syrup with Pears


2kg     sugar

200g  glucose

1.2ltr  Juice from SPC Pears Sliced 3kG


Make dark caramel from sugar and glucose add syrup whisk well while warm add fruit (pears or apple work well)

Use for desserts fillings and toppings or reduce syrup further for glaze usage.
