Peachy Breakfast Smoothie
Ingredients
- 825g can SPC peaches sliced in juice, drained
- 2/3 cup vanilla yoghurt
- 1 banana, sliced
- 2 tbsp mint leaves
- 1 tbsp grated fresh ginger, peeled, finely grated
- 1 tbsp honey
- 1 1/2 cups almond milk, chilled
- Chopped strawberries, passionfruit pulp, mint leaves to serve
Method
- Combine peaches, yoghurt, banana, mint leaves, ginger and honey in the jug of a blender of food processor. Pour over almond milk.
- Process on high until mixture is thick and smooth. Serve in tall glasses topped with chopped strawberries, passionfruit or mint leaves.
Tip: For an extra cold smoothie, blend with a few ice cubes or freeze banana overnight. Replace honey with peach juice to taste if preferred.
